Pumpkin Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil the pumpkin slices in as little water as possible until tender, watching carefully to prevent scorching.

  2. Drain all the water and mash the pumpkin, then rub it through a sieve while warm, adding a small piece of butter.

  3. To the mashed pumpkin, add 1 pint of milk or cream and 4 eggs, with yolks and whites beaten separately.

  4. Add white sugar, cinnamon, and nutmeg to taste, and a little brandy if desired.

  5. Preheat the oven to 400°F (200°C). Heat the batter until scalding hot before pouring it into pie dishes.
