Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Grease the pans and place a piece of butter the size of a small nutmeg in each pan.

Make the batter

  1. Beat the egg whites and yolks separately until very light.

  2. Mix the powdered sugar into the yolks thoroughly.

  3. Fold the beaten egg whites into the yolk mixture.

  4. Gently cut in the flour using a knife.

  5. Add the lemon juice and rind, mixing well.

Bake

  1. Pour the batter into the prepared pans and bake until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trapped with air give the cake its light, airy structure as it bakes.
Powdered sugar
Sweetens the cake and helps create a fine, tender crumb.
Flour
Provides the structure that holds the cake together once baked.
Lemon juice and rind
Adds acidity and aroma that brighten the flavor of the cake.

The step that matters

Fold the beaten egg whites into the yolk mixture. Egg whites hold air only when beaten to the right volume. Folding gently keeps that air in, so the cake rises light instead of collapsing or turning dense.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, flour, butter):
