Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Citron
Forms the bulk of the preserve, its thick rind softening and turning tender as it cooks.
Sugar
Sweetens the preserve and, at high concentration, thickens the syrup and helps preserve the fruit.
Green ginger
Adds a sharp, warm aroma that flavours the sweet syrup.
Lemons
Adds acidity and bright flavour that balances the sweetness of the sugar.

The step that matters

Adding the lemons at the right time. Lemons added too early can break down and turn mushy, losing their bright flavour. Adding them when the citron is nearly done lets them keep their shape and fresh acidity.

Swap the lemon

How well each one fits the dish's main ingredients (ginger, sugar):

  1. Lemonthe original
  2. Orangefits about as well
  3. Limefits less well
  4. Vanillafits less well

Fit is the average pairing score against ginger, sugar. Candidates are from the same food group and used in at least 100 recipes.
