Pickled Onions

Ingredients

Directions

  1. In September, choose small white round onions and remove the brown skin.

  2. Boil water in a clean pot and add enough onions to cover the top.

  3. Once the onions look clear on the outside, quickly remove them and place on a clean cloth, covering them with another cloth.

  4. Repeat the process until all onions are done and let them cool.

  5. Place the cooled onions in a jar or wide-mouthed bottle and pour hot white wine vinegar over them.

  6. Once cooled, cover the jar.
