Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Pare and quarter enough sour apples to nearly fill a deep baking dish.

  3. Add ½ cup of hot water and nearly 1 cup of molasses to the apples.

  4. Make a crust similar to strawberry shortcake, rolling it out to 1 inch thick.

  5. Fit the crust closely over the apples.

  6. Bake in the oven until the crust is done.

  7. While warm, break the crust into pieces and mix it through the apples.

  8. For best results, bake the day before serving and serve with cream or milk.
