What each ingredient does

Smelts
Forms the main body of the dish; the delicate flesh cooks quickly in hot fat.
Egg
Binds the cracker crumbs to the fish so the coating stays in place.
Cracker crumbs
Form a crisp, golden coating that contrasts with the tender fish.
Lard
Frying fat that transfers heat quickly, browning and crisping the coating.

The step that matters

Frying in very hot lard. Very hot fat sears the crumb coating quickly, so it crisps and seals before the fish absorbs grease or breaks apart. If the lard is not hot enough, the smelts soak up fat and turn soggy.
