Stuffed Potatoes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Bake the potatoes at 400°F (200°C) until soft.

  2. Cut a small piece from one end and carefully remove the inside without breaking the skin.

  3. Mash the removed potato with milk, butter, coarse sea salt, and pepper to taste.

  4. Stuff the mixture back into the potato skins.

  5. Place the stuffed potatoes in the oven to keep hot until ready to serve.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
