What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly as it cools.
Sugar
Adds sweetness and helps balance the sharpness of the lemon.
Lemon juice
Provides the acidity and bright lemon flavour.
Lemon rind
Adds aromatic lemon oils for extra fragrance.

The step that matters

Dissolve the gelatine fully before adding the lemon. Gelatine only sets when it is completely dissolved in hot liquid. Undissolved granules leave gritty or weak patches, so stir until no grains remain before mixing in the sugar and lemon.
