What each ingredient does

Gelatine
Sets the syrup into a firm, sliceable, jelly-like texture.
Granulated sugar
Sweetens the candy and, boiled into syrup, forms its body and sugary coating.
Orange rind and juice
Adds citrus aroma and flavor to the sweet.
Lemon juice
Adds acidity that brightens the sweetness of the sugar syrup.
Chopped nuts
Add crunch and texture in contrast to the soft jelly.
Raisins
Add chewy texture and natural sweetness.

The step that matters

Boil steadily for 20 minutes after adding the gelatine. Boiling the syrup concentrates sugar so the candy sets firm when cooled. Too little boiling leaves it soft and sticky, while overheating can make it hard or grainy.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, orange, lemon, raisin):

  1. Almondfits better
  2. Pistachiofits better
  3. Chestnutfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, orange, lemon, raisin. Candidates are from the same food group and used in at least 100 recipes.
