Oatmeal Samp

Ingredients

Directions

  1. Soak 1 pint of oatmeal in warm water for a few hours, just enough to cover it.

  2. Pour the soaked oatmeal into boiling water gradually, adding a good pinch of coarse sea salt.

  3. Cook slowly for 30 minutes or longer, similar to cornmeal hasty pudding.

  4. To make a pudding, mix in eggs, milk, sugar, raisins, and cinnamon as you would for other puddings.
