English Banbury Cakes

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Beat the butter until creamy.

  2. Mix in the candied orange and lemon peel, currants, ground cinnamon, and allspice until well combined.

  3. Roll out the dough to ½ inch thick and cut into pieces.

  4. Roll each piece to double its size, place some filling on one side, and fold over.

  5. Shape into an oval and flatten the top, ensuring the seam is at the bottom.

  6. Brush the tops with egg white and dust with loaf sugar.

  7. Bake in a moderate oven at 350°F (175°C) until golden.
