Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Codfish
Provides the main savory flavor and the body of the mixture.
Mashed potatoes
Adds bulk and binds the fish into a mixture that holds its shape.
Egg
Binds the mixture together and helps it set when cooked.
Butter
Adds richness and moisture to the mixture.
Sweet milk
Adds moisture and softness to the stiff batter.

The step that matters

Drain the fish very dry. Excess water in the fish dilutes the batter and makes the balls soggy and likely to fall apart in hot fat. Cooling the fish before mixing also keeps the egg from scrambling and the batter stiff enough to shape.

Swap the potato

How well each one fits the dish's main ingredients (butter, milk, egg, flour, pepper):

  1. Capsicumfits about as well
