Quails Roasted with Ham

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Clean, truss, and stuff the quails.

  2. Cover each bird with thin slices of ham or salt pork, binding with buttered string.

  3. Roast at 400°F (200°C) for 45 minutes, basting with butter and water three times, then with the drippings.

  4. When done, serve with the ham arranged around the bird.

  5. Skim the gravy, thicken with browned flour mixed in a little cold water, and season with pepper and coarse sea salt.

  6. Boil once and pour over the bird.
