Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Liver
Forms the main body of the dish, cooked tender or crisp depending on the method.
Flour
Coats the liver so it browns and crisps when fried.
Fat bacon
Adds savory fat and flavor when served alongside the hot liver.
Onion
Softens and sweetens during frying, adding flavor to the gravy and fried pieces.
Cold butter
Adds richness and fat to the liver's surface.

The step that matters

Frying the floured liver until crisp. Flour coats the liver so it browns, but overcooking toughens liver proteins and dries it out, so it should be fried briefly.

Swap the onion

How well each one fits the dish's main ingredients (liver, pepper, butter, flour, vinegar):

  1. Shallotfits better
  2. Mustardfits better
  3. Capsicumfits about as well
  4. Onionthe original

Fit is the average pairing score against liver, pepper, butter, flour, vinegar. Candidates are from the same food group and used in at least 100 recipes.
