Southern Sweet Potato Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, combine the mashed sweet potatoes, eggs, sugar, cream or milk, nutmeg, and cinnamon to form a thin batter.

  3. If desired, add lemon or pineapple extract for flavor.

Make the puff paste

  1. Prepare the puff paste by rubbing the butter into the flour until crumbly.

  2. Mix in the water and knead the dough well.

  3. Let the dough rest for 15 minutes.

  4. Roll out the dough thinly. Spread the dough with butter. Sprinkle the dough with flour. Fold the dough. Roll the dough again.

  5. Repeat this process 3-4 times.

  6. Chill the dough for 1 hour.

Assemble and bake

  1. Line a pie dish with the puff paste.

  2. Pour the sweet potato mixture into the lined pie dish.

  3. Bake until set.

What each ingredient does

Sweet potatoes
Provide the bulk of the filling and its moist, dense, custard-like body.
Eggs
Set the filling into a firm custard as they cook, giving structure to the pie.
Sugar
Adds sweetness and helps the filling brown lightly at the edges.
Sweet cream or milk
Adds moisture and richness, softening the filling into a smooth batter.
Butter
Adds fat that makes the puff paste flaky and tender when layered and rolled.
Flour
Forms the structure of the puff paste, holding the layers of dough together.

The step that matters

Baking until set. Underbaked egg custard stays loose and watery in the middle, while overbaking makes it grainy and cracked. Bake until the centre barely wobbles and the filling looks set at the edges.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (sweet potato, egg, sugar, cream, nutmeg, cinnamon, flour):

  1. Raisinfits better
  2. Vanillafits better
  3. Coconutfits about as well
  4. Lemonthe original
