Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cod or haddock
Forms the flaky body of the chowder as it gently stews.
Oysters or clams
Add briny, savoury flavour that mingles with the fish and broth.
Crackers
Thicken the liquid and soak up juices, giving the chowder body.
Butter
Adds richness and a silky mouthfeel to the layers.
Cream
Adds richness and smoothness to the finished broth.

The step that matters

Cover and stew for half an hour. Stewing gently keeps the fish tender and flaky; a hard boil toughens fish proteins and can break the layers apart and curdle the cream.

Swap the mace

How well each one fits the dish's main ingredients (haddock, butter, oyster, cream, onion, pepper):
