Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Oyster Omelet

Ingredients

Directions

Prepare

  1. Chop the oysters very fine.

  2. Beat the yolks and whites of the eggs separately until the whites stand in peaks.

  3. In a frying pan, heat 3 tablespoons of butter.

Make the omelet

  1. In a deep dish, stir the milk into the yolks and add salt, pepper, and chopped parsley.

  2. Gradually mix in the chopped oysters, heating them well.

  3. Pour in the melted butter and gently fold in the egg whites.

  4. Pour the mixture into the hot buttered pan without stirring.

  5. When it begins to set, slide a broad knife around the edges and underneath to allow the butter to reach all parts.

  6. Once the center is set and the bottom is browned, invert onto a hot dish to serve with the brown side up.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trap air for lift, and yolks enrich the custard-like body and set the omelet.
Oysters
Provide the main flavor and tender, savory filling throughout the omelet.
Milk
Adds moisture that keeps the eggs soft and tender as they cook.
Butter
Fat that coats the pan, helps prevent sticking, and browns the bottom.

The step that matters

Folding in the egg whites and pouring without stirring. Whipped whites hold the omelet's lift, and deflating them by stirring or overmixing makes it dense. Gentle folding keeps air in, and leaving the pan undisturbed lets the base set and brown evenly.

Swap the parsley

How well each one fits the dish's main ingredients (oyster, egg, milk, butter, pepper):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Cinnamonfits less well
  4. Tarragonfits less well

Fit is the average pairing score against oyster, egg, milk, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
