Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Split peas
Break down into a thick, starchy body that gives the soup its texture.
Beef bone
Releases flavour and gelatin into the water, adding savoury depth and body.
Onions
Soften and sweeten as they cook, adding aromatic depth to the broth.
Carrot
Adds natural sweetness and colour as it softens in the soup.
Turnip
Softens into the soup, adding mild sweetness and earthy flavour.

The step that matters

Keep the soup from burning. Split peas are dense and starchy and settle on the bottom of the pot, scorching easily. Stirring and keeping the heat low prevents a burnt taste that spoils the whole batch.

Swap the peas

How well each one fits the dish's main ingredients (beef, onion, carrot, turnip, pepper):

  1. Beansfits better
  2. Lentilsfits better
  3. Chickpeafits better
  4. Peasthe original

Fit is the average pairing score against beef, onion, carrot, turnip, pepper. Candidates are from the same food group and used in at least 100 recipes.
