What each ingredient does

Grapes
Provide the main fruit flavour and the bulk of the preserve.
Sugar
Sweetens the preserve and, as it boils, helps it thicken.

The step that matters

Boil the sugar and fruit mixture until thick. As water evaporates, the sugar concentrates and the fruit's natural pectin can form a gel. Stopping too early leaves the preserve runny, while boiling too long can scorch the sugar and make it hard.
