What each ingredient does

Cauliflower
The main vegetable being pickled, providing the bulk and texture of the dish.
White wine vinegar
Provides the sharp acidity that gives the pickle its tang and helps preserve it.
Sugar
Balances the sourness of the vinegar with sweetness.

The step that matters

Seal the jars only when completely cold. Sealing while the contents are still warm can trap steam and condensation inside the jar, which can dilute the brine and affect how well the pickle keeps.
