Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart base and bulk that cooks down into the thick fruit mass.
Sugar
Draws moisture out of the rhubarb and sweetens while helping the mixture thicken into a syrup.
Cider vinegar
Adds acidity that brightens the sweetness and balances the rhubarb's tartness.

The step that matters

Boil until thick. Rhubarb pectin and sugar set only as water evaporates and the syrup concentrates. Stopping too early leaves a thin result, while overcooking can make it stiff and sticky as it cools.

Swap the mace

How well each one fits the dish's main ingredients (rhubarb, sugar, cider, vinegar, clove, allspice, ginger):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against rhubarb, sugar, cider, vinegar, clove, allspice, ginger. Candidates are from the same food group and used in at least 100 recipes.
