Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Provides the main flavour and, once sieved, the body of the soup.
Soup stock
Supplies the savoury base that the sieved celery is cooked into.
Cream
Adds richness and a smooth, velvety texture to the finished soup.
Flour
Thickens the soup slightly when cooked with the butter and cream.
Butter
Adds fat and flavour, and helps the flour blend smoothly into the cream.

The step that matters

Heating the cream mixture without boiling. Boiling a cream-based soup can cause the dairy to separate and the texture to turn grainy. Heating it gently until very hot keeps it smooth.

Swap the celery

How well each one fits the dish's main ingredients (cream, flour, butter):

  1. Nutmegfits better
  2. Jalapenofits better
  3. Capersfits better
  4. Celerythe original

Fit is the average pairing score against cream, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
