Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to foam, they give the custard its light, airy structure.
Cream
Provides fat and richness, giving the custard a smooth, creamy texture.
Pounded loaf sugar
Whipped with the egg whites to stabilise the foam and add sweetness.

The step that matters

Allow the mixture to just begin to boil. Egg proteins set with heat, so the mixture should only just begin to boil. Overheating can curdle the eggs and make the custard grainy instead of smooth.

Swap the lemon

How well each one fits the dish's main ingredients (cream, egg, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Strawberryfits about as well
  4. Lemonthe original

Fit is the average pairing score against cream, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
