Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiffness, they trap air and give the jelly a light, airy sponge texture.
Lemon-flavored jelly powder
Sets with the hot water into a gel that holds the sponge together and gives it flavor and sweetness.
Fresh firm berries
Add fresh fruit flavor, aroma and a bit of acidity, and firm berries hold their shape in the set jelly.

The step that matters

Folding in the egg whites. If the jelly is too warm, the whites deflate; if it is too cold or set, they will not blend smoothly. Adding the whites a little at a time while the jelly is just beginning to thicken keeps the air bubbles and makes a light, even sponge.
