Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Strawberries
Provide the flavour and the juice that sweetens and tints the foam.
Jelly powder
Sets the liquid into a wobbly gel that holds the foam's shape.
Whipped cream
Adds air and richness, giving the set jelly a light, creamy texture.
Lemon juice
Adds acidity that brightens the strawberry flavour.
Sugar
Draws juice out of the strawberries and adds sweetness.

The step that matters

Fold in the cream while the jelly is only thickening. If the jelly is still runny, the cream will deflate and separate; if it has set firm, the cream will not blend in evenly. Waiting for it to just begin thickening gives a light, airy foam.
