What each ingredient does

Peaches
Provide the main fruit flavor, body and natural sweetness of the cream.
Gelatin powder
Sets the mixture so it holds its shape when chilled.
Sweet cream
Adds richness and a smooth, creamy texture.
Whipped cream
Adds air and lightness, making the set cream airy rather than dense.

The step that matters

Folding in the whipped cream while the mixture is cold. Gelatin begins to set as it cools, so the mixture must be thickened on ice but not fully set. Folding gently while it is still fluid keeps the whipped cream's air trapped; if the mixture sets first, lumps form and the cream turns dense.

Swap the peach

How well each one fits the dish's main ingredients (cream, gelatin):

Fit is the average pairing score against cream, gelatin. Candidates are from the same food group and used in at least 100 recipes.
