Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Provide the main flavor and texture of the soup.
Eggs
Beaten eggs stirred in off the heat thicken the soup gently and add richness.
Flour
Thickens the broth into a smoother, more body-filled soup.
Butter
Adds fat for richness and a rounder mouthfeel.
Milk
Adds creaminess and mild sweetness to the broth.

The step that matters

Adding the eggs off the heat. Eggs set when heated, so stirring them in after removing the pan from the stove, rather than boiling them, keeps the soup smooth instead of curdled or grainy.
