Why it works: Nutmeg and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 11,917 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, cream together the brown sugar and butter until smooth.

  3. Beat in the egg, then stir in the molasses and strong coffee.

  4. In another bowl, combine the flour, baking soda, cream of tartar, nutmeg, cinnamon, cloves, and allspice.

  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  6. Fold in the raisins and lemon and vanilla extracts.

Bake

  1. Pour the batter into a greased baking pan.

  2. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Provides the structure that holds the cake together as it sets.
Butter
Adds fat for a tender crumb and rich flavor.
Molasses
Adds moisture, dark color and a deep, sweet flavor.
Baking soda
Reacts with the acidic molasses and coffee to help the cake rise.
Brown sugar
Adds sweetness, moisture and a caramel-like flavor.
Egg
Binds the batter and helps give it structure.

The step that matters

Mixing the dry ingredients into the wet mixture. Mixing only until just combined keeps gluten development low, so the cake stays tender rather than tough and dense.
