Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the mixture into a smooth, custard-like cream when gently heated.
Sugar
Sweetens the cream and balances the sharpness of the lemon juice.
Lemon juice
Adds bright acidity that cuts the richness of the eggs.
Lemon rind
Adds aromatic lemon oil for fragrance without extra liquid.

The step that matters

Heat the mixture gently over boiling water. Egg proteins set at moderate heat and thicken the cream. If the mixture gets too hot or is not stirred, the eggs can curdle or scramble, leaving a grainy texture instead of a smooth one.

Swap the lemon
