Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the milk into a rich custard as they set with heat.
Milk
Forms the liquid base of the custard that the yolks thicken.
Egg whites
Whipped to a foam that forms the light, floating topping over the custard.
Sugar
Sweetens the custard and adds body to the dish.

The step that matters

Spread the well-beaten egg whites over the hot custard.. Egg whites must be beaten to stiff foam so they hold their shape; under-beaten whites will sink or weep into the custard instead of floating.

Swap the coconut

How well each one fits the dish's main ingredients (egg, milk, sugar, lemon):

  1. Vanillafits better
  2. Orangefits better
  3. Figfits better
  4. Coconutthe original

Fit is the average pairing score against egg, milk, sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
