Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Make the meringue

  1. Beat the egg whites to a high, firm froth.

  2. Stir in the powdered sugar and essence, and continue to beat until very light.

Bake

  1. Drop spoonfuls onto well-buttered parchment paper, spacing them about an inch apart.

  2. Place the paper on a half-inch board and bake in a hot oven (400°F / 200°C).

  3. Watch closely and remove when they begin to look yellowish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a foam that traps air and gives the cookies their light, airy structure.
Powdered sugar
Dissolves into the foam to stabilize it, add sweetness, and give a fine, glossy texture.

The step that matters

Removing the kisses from the oven. Sugar browns quickly at high heat, so the cookies can turn tan, dry, or bitter within minutes. Pulling them as soon as they show color keeps them pale and soft inside.
