Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the almonds

  1. Pour boiling water over the almonds, then remove the skins and soak them in cold water for a few moments.

  2. Pound the almonds into a smooth paste, adding the lemon essence.

Make the dough

  1. Mix in the powdered sugar and egg whites, working the paste well with the back of a spoon.

Shape and bake

  1. Wet your hands and roll the mixture into balls the size of a nutmeg, placing them on buttered paper an inch apart.

  2. Wet your hands again and smooth the surface of the macaroons.

  3. Bake in a cool oven at 300°F (150°C) for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the main body and nutty flavour of the macaroons.
Powdered sugar
Adds sweetness and helps bind the paste into a dough.
Egg whites
Provide structure and help the macaroons hold their shape and rise.

The step that matters

Working the paste with the egg whites and sugar. Overworking or underworking the mixture changes its texture. Sufficient kneading, done gently with a spoon, makes a smooth, cohesive dough that holds its shape in the oven rather than spreading or cracking.

Swap the almond

How well each one fits the dish's main ingredients (lemon, sugar, egg):

  1. Pistachiofits about as well
  2. Milletfits about as well
  3. Almondthe original
  4. Chickpeafits about as well

Fit is the average pairing score against lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
