Directions

Make the candy

  1. Dissolve the sugar in as much cold water as needed.

  2. Boil without stirring until it breaks easily in cold water.

  3. Remove from heat and add the lemon oil.

Set and shape

  1. Butter a dripping pan and pour the mixture to a thickness of ¼ inch.

  2. When partly cold, mark off in squares.

  3. If pulled when partly cold, it will resemble ice cream candy.

What each ingredient does

Coffee 'a' sugar
Forms the main body of the candy and provides its sweetness as it cooks.
Butter
Adds richness and fat, giving the candy a softer, smoother bite.
Cream of tartar
Acid that helps prevent sugar crystals from forming, keeping the candy smooth.

The step that matters

Boil without stirring until it breaks easily in cold water. Sugar syrup must reach the right concentration to set into brittle candy. Stirring can trigger crystallisation, which makes the candy grainy, so the cook should leave it alone and test by dropping a little into cold water.
