Canned Peaches

Ingredients

Directions

  1. Prepare two porcelain kettles: one with boiling water and the other with a syrup made with white sugar.

  2. Pare and halve the peaches, then drop them into the boiling water.

  3. Cook the peaches until a silver fork can pierce them easily.

  4. Remove the peaches with a wire spoon and place them in a can until full.

  5. Pour enough boiling syrup over the peaches to fill the can and seal immediately.

  6. Continue this process, preparing and sealing one can at a time.

  7. If any syrup is left, boil it down with the water; if not, add more sugar to make a nice marmalade.
