Ingredients

Directions

Prepare the peaches

  1. Cut the peaches in halves, peel them, and remove the stones.

  2. Crack half the seeds and blanch the kernels.

Cook the peaches in syrup

  1. Make a syrup by boiling the sugar with water until clear.

  2. Add the peaches and kernels to the syrup and boil gently for 10 minutes.

  3. Remove half the peaches.

  4. Boil the remaining peaches for another 10 minutes.

  5. Take out all the peaches and kernels.

Make the jelly and build the mold

  1. Mix the remaining syrup with the strained lemon juice and dissolved isinglass.

  2. Boil the mixture once.

  3. Fill a mold halfway with it and let it set.

  4. Add some peaches and a little more jelly, then let it set again.

  5. Add the rest of the peaches.

  6. Fill the mold with jelly.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

  1. Peach + lemontop 12% of all pairs

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Form the fruit layers and provide the main flavor of the jelly.
White sugar
Sweetens the syrup and helps give the jelly its body.
Lemon juice
Adds acidity that brightens the sweet peach flavor.
Isinglass
Sets the liquid into a firm jelly as it cools.

The step that matters

Letting each layer set before adding the next. Isinglass gels as it cools, so a layer poured before the one beneath has firmed can mix into it and blur the pyramid's clean stripes. Each layer needs time to set fully.

Swap the lemon

How well each one fits the dish's main ingredients (peach, sugar):

  1. Vanillafits better
  2. Apricotfits better
  3. Pearfits better
  4. Lemonthe original

Fit is the average pairing score against peach, sugar. Candidates are from the same food group and used in at least 100 recipes.
