Spare Rib Potpie

Ingredients

Directions

  1. Cut the spare ribs into strips three to four inches wide.

  2. Place the ribs in a kettle and cover with hot water. Stew until tender.

  3. Season the ribs with coarse sea salt and black pepper.

  4. Layer spare ribs in the bottom of the kettle, season again, and add a layer of quartered potatoes and bits of butter.

  5. Add small squares of rolled thin baking powder dough, then another layer of spare ribs, repeating until the kettle is two-thirds full.

  6. Pour in the cooking liquid from the ribs and add hot water if needed.

  7. Cover and boil for 30 to 45 minutes, adding hot water to prevent boiling dry.

  8. For the crust, roll out light biscuit dough, cut into squares, let rise, and place on top before cooking.
