Spice Cake

Why it works: Raisin and flour match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream the butter and sugar together until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the milk, baking powder, cinnamon, and mace.

  5. Gradually add the flour, mixing until just combined.

  6. Fold in the raisins and citron.

Bake

  1. Pour the batter into a greased cake pan.

  2. Bake for 45-60 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a tender, rich crumb.
Eggs
Add structure and richness, binding the batter as they set in the oven.
Flour
Forms the cake's structure as its proteins set during baking.
Baking powder
Releases gas in the batter, helping the cake rise in the oven.
Sugar
Sweetens the cake and helps create a light, fluffy creamed base.
Raisins
Add chewy texture and concentrated sweetness throughout the cake.

The step that matters

Adding the flour. Mixing flour only until just combined keeps gluten development low, so the cake stays tender rather than tough and dense.

Swap the mace

How well each one fits the dish's main ingredients (raisin, butter, sugar, milk, egg, cinnamon, flour):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Clovefits better
  4. Macethe original

Fit is the average pairing score against raisin, butter, sugar, milk, egg, cinnamon, flour. Candidates are from the same food group and used in at least 100 recipes.
