What each ingredient does

Milk
Forms the liquid base that the starch and yolks thicken into a smooth set dessert.
Corn-starch
Thickens the milk as it heats, giving the blanc-mange its firm, sliceable body.
Egg yolks
Add richness and help thicken and enrich the custard as they cook gently.
Sugar
Sweetens the dessert and adds to its soft, smooth texture.

The step that matters

Pour the mixture back into the basin and stir until thickened to your liking.. Starch thickens when heated, but egg yolks can scramble if the mixture gets too hot or is left unstirred over direct heat. Gentle, constant stirring over simmering water keeps the custard smooth.
