Why it works: Butter and milk are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Clam Soup
Ingredients
Directions
Wash the clams in cold water and strain the liquid.
Remove the soft parts and chop the hard parts.
Boil the chopped clams with the strained liquid.
Strain the mixture and thicken with butter and flour rubbed together.
Scald the milk with a slice of onion, then add it and the soft clams to the soup.
Season with salt, pepper, butter, and a little nutmeg, and cook for 2 minutes.
If using egg whites, beat them stiff and place in a tureen, then stir the soup into them; or add the yolks when serving.
