Escalloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Drain the oysters and remove all bits of shell.

Assemble

  1. Cover the bottom of a buttered baking dish with cracker crumbs.

  2. Season with salt, pepper, and bits of butter.

  3. Add a layer of oysters seasoned the same way.

  4. Repeat layers until all ingredients are used, finishing with cracker crumbs on top.

  5. Add a larger quantity of butter on top and pour over the oyster liquor and milk.

  6. Allow room for rising.

Bake

  1. Bake uncovered for 30 minutes at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and tender, savory body of the dish.
Cracker crumbs
Absorb the liquid and give the layers structure and a toasted top.
Butter
Adds richness and fat that helps the top brown during baking.
Milk
Supplies moisture that soaks into the crumbs and sets into a custard-like binding.

The step that matters

Allow room for rising. Milk and the liquid from the oysters expand and bubble as they heat. Leaving space in the dish keeps the mixture from overflowing in the oven.
