Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Trim the leg of lamb neatly and place it in a roasting pan.

  2. Dust with coarse sea salt and black pepper.

  3. Rub 2 tablespoons of melted lard or butter over the lamb.

  4. Pour 2 tablespoons of water into the pan.

Roast and serve

  1. Roast in a 400°F (200°C) oven for 1 hour, turning and basting occasionally.

  2. Place the lamb on a hot platter and skim and strain its own gravy over it.

  3. Garnish with watercress and serve with mint sauce or gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leg of lamb
Forms the main roast; its fat and muscle cook into the tender, juicy meat being served.
Lard or butter
Adds fat that promotes browning and carries flavour over the lamb's surface during roasting.
Water
Added to the pan to create a thin gravy from the meat juices and drippings.

The step that matters

Roast in a 400°F (200°C) oven for 1 hour, turning and basting occasionally. Turning and basting keep the surface from drying out and help it brown evenly. Heat that is too low or uneven leaves the lamb pale and dry, while the fat and juices needed for gravy are lost.

Swap the mint

How well each one fits the dish's main ingredients (lamb, pepper, butter, watercress, sauce):

Fit is the average pairing score against lamb, pepper, butter, watercress, sauce. Candidates are from the same food group and used in at least 100 recipes.
