Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Place the pork in a roasting pan.

  3. Sprinkle the pork with salt and pepper, then spread a little butter over it.

  4. Pour ½ cup of water into the pan.

Roast and serve

  1. Roast in the oven for 1 hour or more, depending on the size of the roast.

  2. Baste the pork occasionally.

  3. If desired, add small peeled raw potatoes to the pan, seasoning and basting them as well.

  4. Serve the pork and potatoes on the same platter.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork loin
Forms the main meat, which becomes tender and juicy as it roasts slowly in the oven.
Butter
Adds fat that carries seasoning and promotes browning on the pork surface.
Water
Creates steam in the pan that keeps the pork moist during roasting.
Potatoes
Absorb pan juices and fat while roasting, becoming tender and flavourful.

The step that matters

Baste the pork occasionally. Spooning pan juices over the meat keeps the surface moist and helps it brown evenly, while the pan liquid adds flavour. Without basting, the outer layer can dry out during the long roast.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (pork, pepper, butter):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Onionfits less well
  4. Tomatofits less well

Fit is the average pairing score against pork, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
