Why it works: Pepper and sage match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

What each ingredient does

Pork tenderloins and trimmings
Supplies the meat and fat that form the body and juiciness of the sausage.
Salt
Seasons the meat and helps draw out proteins so the mixture binds together.
Powdered sage
Adds the characteristic aroma and savory flavor of the sausage.
Hot lard
Poured over the packed meat to seal its surface against air.

The step that matters

Test the seasoning by frying a small cake. Raw ground meat gives little sense of final flavor. Frying a small patty lets the cook taste the salt, pepper and sage before the whole batch is packed, so adjustments can be made while they are still easy to correct.

Swap the sage

How well each one fits the dish's main ingredients (ham, pepper):

  1. Parsleyfits better
  2. Clovefits better
  3. Marjoramfits better
  4. Sagethe original

Fit is the average pairing score against ham, pepper. Candidates are from the same food group and used in at least 100 recipes.
