Roast Goose

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and roast

  1. Prepare the goose as you would a chicken, using potato or onion stuffing.

  2. Place the goose in a roasting pan and add 1 cup of water and 1 teaspoon of salt.

  3. Roast in a 400°F (200°C) oven for 1 hour, basting every 10 minutes.

  4. Reduce the oven temperature to 350°F (175°C) and continue roasting.

  5. Cook for 25 minutes per pound for a goose or 15 minutes for a gosling.

Serve

  1. Serve with apple sauce.

What each ingredient does

Goose
Provides the main meat; its fat renders during roasting, keeping the meat moist and crisping the skin.

The step that matters

Reducing the oven temperature to 350°F. The initial 400°F heat starts browning and crisping the skin. Lowering the heat then lets the thick meat cook through gently, so the skin does not burn before the centre is done.

Swap the apple

How well each one fits the dish's main ingredients (potato, sauce):

  1. Avocadofits better
  2. Limefits better
  3. Coconutfits better
  4. Applethe original

Fit is the average pairing score against potato, sauce. Candidates are from the same food group and used in at least 100 recipes.
