Ingredients

  • 1 cup milk
  • 1 egg yolk
  • ½ cup powdered sugar
  • juice of 1 lemon
  • grated yellow rind of 1 lemon
  • 2 egg whites

Directions

Scald the milk in a saucepan.

In a bowl, mix the beaten egg yolk with the powdered sugar.

Stir the egg mixture into the scalded milk and cook for 3 minutes, stirring constantly.

Remove from heat and let cool.

Once cool, stir in the lemon juice and grated lemon rind.

Before serving, fold in the stiffly beaten egg whites.
