Why it works: Vanilla and cinnamon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 5,287 recipes. Both carry 4-methoxybenzaldehyde, which smells sweet, anise. The science ↓

Devil Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, cream together the sugar and butter.

  3. Add the grated chocolate mixed with hot water and stir until combined.

  4. Mix in the milk, flour, eggs, baking powder, vanilla, baking soda, cinnamon, and allspice until smooth.

Bake and finish

  1. Pour the batter into prepared cake pans and bake for 25-30 minutes or until a toothpick comes out clean.

  2. Let the cakes cool before assembling with a chocolate caramel filling.
