Mocha Cake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. In a bowl, beat together the sugar, egg yolks, vanilla, and coffee for 5 minutes.

  2. Gently fold in the sifted flour and the stiffly beaten egg whites.

  3. Pour the batter into a small square layer cake pan.

  4. Bake at 400°F (200°C) for 20 minutes.

  5. Let cool slightly, then turn out of the pan and cut in half crosswise.

  6. Spread half of the Mocha Cream filling on the cut side, then reassemble the cake.

  7. Spread the remaining filling on top, dust with sugar, and serve fresh.
