Pound Cake

Why it works: Nutmeg and lemon match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 11,318 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

Make the batter

  1. Cream the butter and sugar together until light and fluffy.

  2. Add the egg yolks one at a time, mixing well after each addition.

  3. Stir in the sifted flour and nutmeg, then add the lemon extract.

  4. Pour the batter into a greased loaf pan.

Bake

  1. Bake for 1 hour or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a tender, rich crumb.
Sugar
Creamed with butter to aerate the batter and add sweetness and gentle browning.
Sifted flour
Provides the structure that sets as the cake bakes.
Egg yolks
Add richness, emulsify the batter, and help set the crumb.

The step that matters

Adding the egg yolks one at a time. Adding each yolk fully before the next keeps the butter-sugar mixture emulsified. If the eggs go in too fast, the batter can curdle and the cake may turn out coarse or greasy.

Swap the lemon
