Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Butter a baking dish.

Layer and bake

  1. Layer 1 cup of cracker crumbs in the dish.

  2. Add a layer of 1 dozen oysters, seasoned with coarse sea salt and black pepper, and dot with 2 tablespoons of butter.

  3. Repeat layers until the dish is nearly full, finishing with a top layer of cracker crumbs.

  4. Pour enough milk over the layers to barely cover them.

  5. Bake for 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Form the main filling and provide the briny, savory flavor of the dish.
Cracker crumbs
Absorb liquid and form a soft, bready layer between the oysters.
Milk
Provides moisture that softens the crumbs and gently cooks the oysters as it bakes.
Butter
Adds richness and helps the top layer brown in the oven.

The step that matters

Pour enough milk to barely cover the layers. Too little milk leaves the crumbs dry and the dish tough, while too much makes it soupy and dilutes the oyster flavor. The liquid should just reach the layers so the crumbs soften evenly as they bake.
