What each ingredient does

Coffee
Provides the flavour and body of the brewed drink.
Crushed egg shell
Helps settle the grounds so the brewed coffee comes out clearer.
Egg white
Binds to fine grounds and helps clarify the coffee as it is cleared.

The step that matters

Clear the coffee with a little cold water. Cold water added after boiling makes the grounds sink, so the coffee looks clearer. Pouring it in too early or stirring it up again leaves grounds suspended in the drink.
